The La Favorite distillery, built in 1842, originally employed a water wheel to power the cane-crushing mills, the first step in sugar production. At that time, the estate included two sugar refineries and a small rum distillery with five fermentation vats, a small boiler and copper pot still. Bankruptcy in 1875, followed by the hurricane of 1891 closed the estate until 1909 when Henri Dormoy purchased the property.

Clairin Rums are from indigenous cane varieties, non-hybridized, with no chemistry in agriculture. Spontaneous fermentation with no yeast selected, archaic distillation, and no filtration. Haiti is perhaps the most unique and undiscovered frontiers of rum and Clairin are the true ancestral rums of Haiti. In all of the rest of the Caribbean there are around 50 operating distilleries - in Haiti alone there are well over 500 of these traditional village distilleries.

This blend of 3-4 barrels (a total of 658 bottles) was aged entirely in new French oak for just over 6 years in the humid tropical climate of Martinique, before being blended and bottled at 48% abv. The barrels selected were chosen to highlight the darker and deeper profile that agricole rum can show with extended aging in French oak, which generally shows a more savory and chocolatey character than the intense vanilla of American oak.
